An appetizer combining shred duck confit, potato cubes and mushrooms, tossed with a mayonnaise dressing. It is deceivingly simple and simply unforgettable.
Classic Chinese Roasted Duck (Lunch period available)
Roasted duck is one of the most celebrated dishes in China, consisting of thin pieces of tender, roasted duck meat and coveted crisp skin wrapped in a thin wheat-flour pancake, along with sliced spring onions, cucumbers, and sweet dark sauce.
Braised Duck Feet, Fish Maw, Mushrooms
This traditional Chinese New Year braised dish features a classic combination of fish maw, duck feet, dried mushroom and seasonal veggies The stews are cooked inside the soup based for several hours to deeply infuse the dish full of flavour.
Poached Yabbies with Mushrooms in Sichuan Style
The yabbies are poached in an authentic Sichuan style spicy soup base, which consists of stock, mushrooms, bean paste, dried chili, garlic, paprika powder together with boiled oil to produce a unique combination and result.
Pan-Fried Duck Foie Gras On Toast (Dinner period available)
The duck foie gras is pan-fried until golden brown and slightly melted, finished with toast and Balsamic sauce to accentuate the tastes and texture.
